Is the refrigeration absolutely necessary after seven days to kill the yeast, or is this purely optional? I would probably finish the wine within three days after completion!

DR BHALDAVE - I just now finished preparing this mixture. Two queries please: YEAST - was prepared in tepid water, comfortable enough for the finger, but much warmer than room temperature. Was this sufficient? The SUGER added was maybe 5 oz. by accident, will this speed the fermenting process significantly? Thank you very much, I enjoy your video!!
A FLY just now sat on my new suger, how will this affect my SECOND TRY which I will make in one week?

Hi many reasons, no simple answer. yeast strain out of date , too old, or 80-90% dead, has a lag period for 2-4 days , then it will pick up local wine merchandise store may have some answer. sugar low concn. how do you know alcoho is not there, may be still so low that your taste buds or smell my not be able to detect it.wait for a 5-7 days more , the acidity in juice may be too much, or the fermentation jar/vessle got contaminated, keep it clean, keep it cool, wait for few days more ok.bye bye

ENJOY your home made brew. It will be as good as the typical manaschewitz concord wine and good enough to make a "MANHATTEN" cocktail with a dash of bitters and icecubes shaken , stirred and strained , or on the rocks, ENJOY. PLEASE make it a point to let me know how you came out .okay.
