I'm not at all impressed with this mans knowledge on winemaking. It would be nice if you mentioned cleanliness to the poor chaps that follow your advice.

Using a glass to mash the fruit sounds like you're asking for trouble. Use a plastic cup or a clean wooden block.

you can use damaged fruit - the riper the better - that is an old wive's tale. Use the ripest fruit and smoe unripe fruit for a bite added to the taste. Roll Tide!
